I wanted to make a healthier version of hamburger buns since my family and I pretty much grill once a week with burgers. (I've been eating boca burgers though, and they taste so much better grilled than cooked in the oven or microwave!)
These buns turned out amazing, they're adapted from several different recipes I've seen floating around blogworld. They're actually made from sweet potatoes so they are loaded with nutrients you wouldn't normally be getting from white rolls. Even my Dad, who is a die hard white hamburger and hot dog bun kinda guy really loved them.
My only complaint was that I made them a little thick. Next time I'll make them the same shape but use less dough for a thinner bun. That means I'll get even more out of the recipe!
The leftovers made for great breakfast (like pictured above) slathered with non- dairy butter. mmm...
